Mangalore bun/Banana bun recipe

The first time I ate these were in my hostel mess in Karnataka. They used to give us these buns along with chutney for snacks. My first thought was "Wow this puri is sweet!" After that my friend told me that it was one of the famous things made in Mangalore and that it was called 'Mangalore bun.' Few days back I was thinking about what to make for munching in the evening using the limited ingredients that we had. And that's when I stumbled across this very simple recipe of Mangalore buns.

RECIPE FOR MANGALORE BUNS:

* 1 ripe banana 
* 1 ½ cup or more maida
* ½ cup powdered sugar
* ½ tsp Baking soda
* 1 pinch of salt
* 1 tsp ghee
* 1 tsp jeera

1. In a large bowl, mash a ripe banana nicely. It must not have any pieces in it. Mash it properly with a fork. Or you can use a hand mixer if available.

2. Now to this mashed banana, add powdered sugar, baking soda, salt and give it a good mix.

3. Add Maida and keep mixing until you get a dough like consistency.

4. Now add ghee to this dough to make it a bit softer. Add jeera. By now the wonderful aroma of this mixed dough may reach your nose and you will be ready to devour this snack. But stop right there! :)


5. Allow this dough to rest for around 5-8  hours. The dough will rise in this time ^.^

6. After 5 hrs, make small balls out of the dough and roll them in maida powder so that they don't stick to the plate.

7. After that, flatten these balls with a rolling pin and make them like a poori. It shouldn't be very thin. Make sure to keep it thick on the sides.

8. Now in a frying pan/kadai, add oil and deep fry these little pooris on a medium flame. Fry until they turn golden brown.




Note: While looking at them during frying, you may feel they are burning, but they are not. It's just the sugar which leads to formation of that colour.

Enjoy these Mangalore buns with green coconut chutney and with a cup of steaming hot tea :)
