Banana cake/ Banana bread recipe

Bananas when overripe becomes like the untouchable fruit in our house. Nobody wants it anymore now as it has become all mushy and sticky. So the best use we can make out of this banana at this stage is to make a banana cake! This gives the dull, weak, unwanted banana a completely different dimension. Like Cinderella's amazing transformation into a princess.. xD But it's only possible when you are ready to play the role of fairy godmother.. I mean when you are finally getting yourself out of that couch and starting your work.
        So without further adieu , let's get into my mom's recipe of banana cake/bread. It is super delicious and I would say a must try recipe! We made this twice in a row! And that tells something. 

Banana cake/ Banana bread recipe:

☆Things you will need:

•2 bananas 
•2½ cup of maida
•2 cup of powdered sugar
•1½ -2 tsp of powdered jaiphal
•2 eggs 
• ½ cup of sugar (for caramel preparation) 
•1 tsp of baking powder
•1 tsp of baking soda
•1 tsp of vanilla extract
•1 cup of milk
• A handful of raisins, almonds/walnuts





☆Method of preparation:

1. In a large bowl sieve in maida, baking soda, baking powder. Then sieve it once again. (This is done for aeration so that no lumps are formed. Make sure to follow this step properly)

2. Take 2 eggs and separate the egg whites and the yolks. 

3. Add the egg whites to the blender or you can even use a hand mixer. Blend it well until it forms a creamy consistency. Pour the mixture into another bowl. 

4. Now give a blend to the egg yolks until creamy. Add the egg white slowly into our dry ingredients and give it a good mix. Now add the yolks as well and stir. 

5. Add sugar into this and mix. Add vanilla extract. Powder jaiphal and add it to the mixture. Give it a stir so that it settles uniformly.  

6. Add sugar into a vessel and heat it until it is caramelized. Now cool this completely before adding to the mix.  

7. Add 1 cup of milk to your mixture and proceed to add caramel. Stir well. 

8. Now add the raisins, almonds, walnuts ( or whatever dry fruit you like)

9. Keep it in the preheated oven (at 210°C for 15 min) for around 40 minutes at 210°C. Check with a toothpick to see if done. If not place it in the oven for another 5 min. It must be done by then. :)

Note: While mixing the ingredients, don't mix it like you're preparing an omlete. Rather be very gentle with it. Just fold the ingredients in. Don't mix it in too much. It will ruin your cake!
