SCHEZWAN SAUCE RECIPE
INGREDIENTS:
This recipe makes a bowl of Schezwan sauce. Ir goes well with momos or any other Desi Chinese dish.
☆ Red dried chillies (around 20)
(If the chilly that you're using is too spicy, then remove the seeds and use it)
☆ Ginger 2 inch
☆ Garlic 10-12 cloves
☆ Oil- 4 tbsp
☆ Soya sauce- 1 tbsp
☆ Tomato sauce- 2 tbsp
☆ Salt as per taste
☆ Vinegar 1 tbsp
☆ Water 1/2 or 3/4 th cup (depending on the consistency and spiciness)
INSTRUCTIONS:
1. Take the dried chillies in a bowl. Remove its stems and soak it in water for about 45 minutes. After 45 min, put the chilies in a grinder and grind it for 5 minutes. Add a little water and grind to get a paste like consistency. Keep adding water bit by bit until you get that consistency.
Tip: Using a mix of the spicy and less spicy chillies would be the best option.
☆If you only have the less spicy chillies, using that also is alright.
☆However, if you have the tikka (very spicy) chillies, I suggest removing all the seeds before using or else the sauce would be too spicy.
2. Now take a frying pan and heat it on the stove. Once heated, add in oil. After oil is heated a bit, add in the chopped garlic and ginger. Now fry it for a bit. Do not wait for it to turn brown.
3. Once the rawness has gone, add in the chilli paste that we prepared earlier. Stir this mix well and close the pan with a lid for 5-7 minutes.
4. After that add in 1/2-3/4th cup of water. Depending on the thickness and the spiciness that you need, you can adjust the water. Just don't add too much water or else it won't taste good.
5. Add in a tablespoon of soya sauce, vinegar, salt (as per taste), 2 tbsp tomato sauce. Stir this mixture well. Taste the sauce to make sure it's not very spicy. Now close the pan with a lid and let it cook for about 15 minutes.
Schezwan sauce is now ready. Store it in a bowl or a small jar. You can use this sauce for upto a month with refrigeration. :)
